Dinner - Fried Fish Head with Bitter Gourd

Today we've tried another two new recipe from our cook book - Fried Fish Head with Bitter Gourd and Fried Pork in Sweet Sauce.

The fish head taste delicious and the best is that each fish head only cost a mere 20p!!! Hahahaaa.. Superb deal!

As requested by my good old neighbour, I'm gonna post up some recipes for some of the food which we made for the past few weeks. Here goes...

Fried Fish Head with Bittergourd

Ingredients:
1 fish head, cut into pieces
1/2 tsp salt'1 tbsp corn flour
1-2 cup oil for deep-frying
5 slices ginger
2 tbsp fermented black bean suace
1/2 tbsp ground black pepper
1 onion, peeled and cut into pieces
2 red chillies, seeded and cut into pieces
1 bitter gourd, about 200, seeded and sliced
1 stalk of spring onion, cut into pieces

Seasoning:
1/2 tbsp sugar
2 tbsp light soya suace
1 tbsp oyster suace
Dash of sesame oil and pepper
500ml water

Method:
1) Rub fish head with salt and cornflour. Deep-fry in hot oil until golden brown. Dish and drain.
2) Leave 1 tbsp oil in wok, add sliced ginger, fermented black bean, ground black pepper and saute until fragrant. Add oinion, red chilies, bittergourd, spring onion and stir-fry until aromatic.
3) Add fried fish head and seasoning and bring to boil. Lower the head and simmer for 15 minutes or until the sauce is thick. Dish up and serve.
