Dinner - Dried Crispy Eggplant

Tried out my recipe book that i bought in Singapore. Yummy dinner as usual.. :) The dried crispy eggplant is sweet and tasty. Here is the recipe for you to try out.

Ingredients:
500 ml of oil for deep-frying
500g eggplant, cut into thick strips
2 tbsp dired prawns, soaked and chopped
1 tbsp chopped garlic
1 tbsp chopped red chilli
1 tbsp chopped spring onion

Seasoning:
1 tbsp oyster sauce
1 tsp fish sauce
1 tsp sugar
3 tbsp water

Season flour: (Mix well)
150g corn flour
1 tbsp plain flour
1 tsp salt
Dash of pepper

Method:
1) Heat up oil for deep-frying
2) Coat eggplant with seasoned flour and deep-fry in hot oiel until golden brown. Dish up.
3) Leave 1 tbsp oil in wok, saute dried prawns and chopped garlic until fragrant.
4) Add in seasoning and stir well
5) Add in fried eggplant, chopped red chilli, spring onion and mis well.
6) Dish up and serve
